- 1 can (398 ml) chickpeas (* I like Yves Organics, or Eden Organics), drained and rinsed
- 2 lemons, juiced
- 2 tbsp tahini,
- 2 cloves garlic
- pinch sea salt
- 4 tbsp extra-virgin olive oil
- In a food processor, combine 1 can drained and rinsed chickpeas, juice of 2 lemons, 2 tbsp tahini, 2 cloves of garlic and a pinch of sea salt and blitz for 30 seconds.
- Everything should be pureed but appear quite thick.
- With the processor going, slowly add olive oil to loosen.
- Stop and taste, adjust seasonings as desired, usually requiring a touch more lemon or salt if anything.
- Reblitz for another 15-30 seconds to combine one last time.
- That's it!
- Enjoy with your favorite dipping tool, pita bread, carrots, peppers or serve as a condiment at your next bbq!
